Beef Meat Packages
I have learned a great deal about raising beef the last few years and pork as well.  I would like to share a little about beef and what you are buying from us.  We have all heard about how much better “BLACK ANGUS” beef is than all the rest.  I am not a person who will just believe something because everyone says it is so.  Over the last few years, I have raised many different breeds of steers side by side with my all-natural grass fed Black Angus steers.  I have personally fed them all the same.  I raised each animal from a baby and then took them to get them processed, cut and wrapped.  So I can tell you from my own personal experience that the all-natural grass fed Black Angus beef is far better in taste and texture than any other beef on the market!  This is why we now only raise and sell all-natural grass fed Black Angus beef!  I will not ever raise or sell anything else now.  It is by far the best in every way!
 
I would also like to share and expel a common myth.  We have all heard about “CERTIFIED BLACK ANGUS BEEF.”  Well I always thought that meant it was 100% Black Angus beef.  Well that is not the case at all.  I have included here what the meat industry calls   Certified Black Angus beef.  All the beef we sell would meet the qualification for Certified Black Angus beef but I have no interest in going along with the system and then telling you it is certified and charging you more for the exact same beef I sell right now!  I pulled the following information off the Internet so that you could read it.  I also know it to be true because I am a member of the Black Angus Association!
The American Angus Association set up the "Certified Angus Beef" brand in 1978.  The goal of this brand was to promote the idea that Angus beef was of higher quality than beef from other breeds of cattle.  Cattle are eligible for "Certified Angus Beef" evaluation if they are at least 51% black and exhibit Angus influence, which include black Simmental beef and crossbreds.  However, they must meet all 10 of the following criteria, which were refined in January 2007 to further enhance product consistency, to be labeled "Certified Angus Beef" by USDA Graders:[16]
  • Modest or higher degree of marbling
  • Medium or fine marbling texture
  • "A" maturity
  • 10 to 16-square-inch rib-eye area
  • Less than 1,000-pound hot carcass weight
  • Less than 1-inch fat thickness
  • Moderately thick or thicker muscling
  • No hump on the neck exceeding 5 cm (2 inches)
  • Practically free of capillary rupture
  • No dark cutting characteristics
  • Certified Angus Beef (CAB) is a specification-based, branded-beef program which was founded in 1978 by Angus cattle producers to increase demand for their breed of cattle, by promoting the impression that Angus cattle have consistent, high-quality beef with superior taste.  The brand is owned by the American Angus Association and its 35,000 rancher members.  The terms Angus Beef or Black Angus Beef are loosely and commonly misused and/or confused with CAB; this is especially common in the foodservice industry. The brand or name Certified Angus Beef can't be legally used by an establishment that is not licensed to do so. However, Black Simmental beef may also be included in the certified angus beef program.
  • Certified Hereford Beef is beef certified to have come from Hereford cattle.
  • Grass fed beef has been raised primarily on forage rather than in a feedlot.
  • Kobe beef: Cattle of the Wagyu breed raised and fattened in the hills above Kobe, Hyogo Prefecture, Japan.  During the fattening period, the cattle are hand-fed (using high-energy feed, including beer and beer mash) and hand-massaged for tenderness and high fat content.
  • Halal beef (and other food) has been certified to have been processed in a prescribed manner in accordance with Muslim dietary laws.
  • Kosher beef (and other food) has been certified to have been processed in a prescribed manner in accordance with Jewish dietary laws.
  • Organic beef is produced without added hormones, pesticides, or other chemicals, though requirements for labeling something organic vary widely.

Whole and Half Steers
We are selling beef by the whole and half steer.  The cost is $7.95 per lb cut, wrapped and in you freezer.  A steer yields approximately 400 lbs to 450 lbs of meat in your freezer.  Your approximate cost would be $3,180 to $3,578 for a whole steer.  Your approximate cost would be $1,590 to $1,789 for half of a steer.
